Casella Bean Diet Update

After just one week, I have lost 15 pounds!  For those of you who would like to lose with me, try some of the recipes that my Chef Alexis, and Sous Chef Meredith have been making me!
 
Insalata Fagioi da Alexis

2C Romaine Lettuce, chopped
1C Pavoni Beans
1/2 Cup Roasted Peppers, cleaned, no oil
1T Chives, Chopped
salt and chili flake to taste
Red Wine Vinegar to taste

Combine all ingredients and splash with red wine vinegar!


Insalata Cannelini da Meredith

2C Swiss Chard, blanched in Salted water and chopped
1C Cannelini Beans, drained
2T pickled hot chili peppers
Salt and Red Wine Vinegar to taste


Combine all ingredients, splash with red wine vinegar and a dash of salt!
